Comfort food- that feel good, taste good type of food that makes you want to stay in bed and binge watch your favorite show.  Here at WaffleWaffle we’ve created the perfect mix of cheesy mac and cheese with our delicious waffles to make the ultimate Wafflewaffle Breaded Mac and Cheese Balls for such an occasion! It’s made our lazy days the most delicious days and here’s how to make them!

First, the ingredients you will need are:

  • your favorite mac and cheese recipe,
  • 2 WaffleWaffles ,
  • 3 eggs,
  • canola oil,
  • 1/4 cup of plain bread crumbs and your choice of spices and herbs.

 

Ahead of time you can prepare your macaroni and cheese and let it sit in the refrigerator for at least 4 hours. Once the mac and cheese has been chilled scoop out small balls, we made ours 3 ounces, onto a baking sheet and chill once again in the freezer this time.  About 2 hours in the freezer will help the breadcrumb mixture stick.  To make the breading use a food processor to ground up 2 waffles, about the same consistency as Panko bread crumbs. In a bowl, combine 1/4 cup of plain bread crumbs to the waffle mix.  The spices we added were paprika, pepper, chili powder, and cayenne just for a little heat.  Be creative and play around with whatever spices you want depending on your taste!

Next, make an egg wash with 3 eggs and a splash of water or milk, whatever you prefer.  Now to make these little balls of heaven start by heating up your oil to 350 degrees.  The oil can be heated up in a fryer or pan, whatever you have available in your home! Make sure there is enough oil to coat the ball. Grab the balls from the freezer and dip them into the egg wash followed by a cannon ball into the bread crumbs.  It’s important to make sure the mac and cheese balls are packed tight so they don’t fall apart when frying them. If they do feel loose, be sure to keep molding them into balls and dip again in the breadcrumbs to help form the shape. Carefully place each ball into the oil and fry until golden brown, or 3-5 minutes.  These gooey balls can be served on their own, with marinara sauce, ranch, really anything you want!
