Holiday breakfasts don’t have to be complicated or hard, but like we always say, they do have to be delicious! This BerryBerry Overnight Breakfast Casserole can be made the night before and with a simple preheat, and an hour and ten minutes you’ll have a dangerously good meal your family will be thankful for.
We love creating new things with our waffles because they are just so versatile, and we love to eat! We always get asked, what makes WaffleWaffle different from the rest? Well, the answer is simple! They are more like a fresh baked pastry, because they are actually DOUGH based rather than your typical freezer waffle which is made from a thin liquid batter. This means our waffles are equipped and ready to make the perfect dessert aimed to please just about anyone!
For the BerryBerry Overnight Breakfast Casserole You’ll Need:

4 oz. cream cheese
1/2 c powdered sugar
1 cup blueberries
2 tsp vanilla extract
1/2 tsp cinnamon sugar
Here’s how to do it:
Spray 8 x 8 casserole dish with nonstick cooking spray.
Rip apart the waffles into bite size chunks and spread around the bottom of the casserole dish.
In a separate bowl, combine 1 c milk, 3 eggs, 1/2 c powdered sugar, cinnamon, and vanilla. Stir until smooth
Evenly pour mixture on top of waffle chunks and pat down with spatula so the egg mixture begins to soak into the waffles. Sprinkle blueberries all over the top of the dish and cover.
You want to remove the casserole from the refrigerator 30 minutes prior to baking. Preheat oven to 375 degrees F and bake covered for 40 minutes. Uncover and bake for another 30 minutes.
