Ingredients
  1. Jumbo eggs (fresh & chilled)
  2. 1 teaspoon of vinegar
For the hollandaise sauce
  1. 2 egg yolks
  2. 1 stick butter, melted
  3. pinch of salt & pepper
  4. squeeze of lemon juice
To make the hollandaise sauce
  1. Separate eggs
  2. Place egg yolks into a blender
  3. With the blender running on high, slowly pour in melted butter (1 stick) until sauce has thickened
  4. Add salt & pepper to taste
  5. Squeeze of lemon juice (optional, but recommended!)
To poach the eggs
  1. In a saucepan combine 1 1/2 inches water and vinegar & bring to a simmer
  2. Crack 1 egg into a small bowl or cup and slide egg into water
  3. Do this with each egg, spacing them evenly in saucepan, and poach at a very slight simmer until whites are firm and yolks are still runny... about 2 to 3 minutes.
  4. Remove eggs from pan and place spoon out carefully
To heat the waffles
  1. Remove waffles from the freezer
  2. Preheat toaster oven to 400° F
  3. Bake waffles for 4-5 minutes or until warm
  4. Optional: Microwave waffles on high for 20/30 seconds
Putting it all together
  1. Once your WaffleWaffle's are heated
  2. Top with the poached egg (carefully, so you don't break the yolk!)
  3. Drizzle hollandaise on top of the egg
  4. Finish with rosemary or tarragon ... if you're looking for a spicy kick try Jalapeños!
Notes
  1. Try adding some protein to your Benny for a more substantial meal!
